Also called Aztec spinach. A Mexican vegetable that is typically prepared in a manner similar to spinach or broccoli. We use the young leaves in our salad mix. It is related to quinoa and the seed heads may be eaten cooked. It is high in food value. Stuffed with cheese, batter fried and served in a pasilla chile sauce, huazontles are one of the most appreciated greens in Mexico. Easy to grow.
